Last minute guests inspire Take 2 of Kamado Pork Ribs
My wife sprang it on me at the last minute that we were expecting a visit from her sister for dinner.
So out to Aldi, I go 2 packs of some decent looking ribs.
Not a lot different to the first time, as I am looking to practice the timing etc without adding too many variables. I just experimented with some different herbs in the rub to keep it simple.
Did a variation of the 3-2-1. For these ribs, it went closer to 2-1-1.
2hrs at 225f indirect on the grill, 1hr wrapped with apple juice added at 250f, and finished off unwrapped and basted every 10/15mins with basting sauce with added maple syrup. Trying to get that added stickiness. During the last 1/2 hr, I ramped the temp up to 300f ish to try and “set” the glaze.
Turned out bloody delicious. Probably too much as we ate so much we both got stomach pains. The ONLY downside of the Kamado Joe
