Ingredients
- 2 cups self-raising flour
- ½ teaspoon salt
- 4 tablespoons caster sugar
- 1 teaspoon cinnamon
- 1 cup milk
- 1 egg (lightly beaten)
- ½ cup butter (melted)
- 1 cup apples
Instructions
- Preheat oven to 180°C (fan-forced).
- Lightly grease a 12 hole muffin tray.
- In a large bowl (use our largest size glass bowl), sift the self-raising flour and add the salt, caster sugar and cinnamon. Mix to combine.
- Add the milk and egg. Mix to combine.
- Stir in the melted butter and apples.
- Gently fold through the mixture.
- Spoon the mixture evenly into the muffin holes.
- Bake in the oven for 20-25 minutes or until golden and cooked through.
- Rest in the tray for 5 minutes before transferring to a wire rack to cool completely.
Notes
This recipe makes 12 perfect full-size muffins. These are a huge hit in our family.
