Ingredients

  • 2 cups self-raising flour
  • ½ teaspoon salt
  • 4 tablespoons caster sugar
  • 1 teaspoon cinnamon
  • 1 cup milk
  • 1 egg (lightly beaten)
  • ½ cup butter (melted)
  • 1 cup apples

Instructions

  1. Preheat oven to 180°C (fan-forced).
  2. Lightly grease a 12 hole muffin tray.
  3. In a large bowl (use our largest size glass bowl), sift the self-raising flour and add the salt, caster sugar and cinnamon. Mix to combine.
  4. Add the milk and egg. Mix to combine.
  5. Stir in the melted butter and apples.
  6. Gently fold through the mixture.
  7. Spoon the mixture evenly into the muffin holes.
  8. Bake in the oven for 20-25 minutes or until golden and cooked through.
  9. Rest in the tray for 5 minutes before transferring to a wire rack to cool completely.

Notes

This recipe makes 12 perfect full-size muffins. These are a huge hit in our family.
