Banana Choc Chip Cookies

Ingredients

  • 180g butter (softened)
  • 1 cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1½ cups plain flour
  • ½ teaspoon bicarb soda
  • 1 teaspoon cinnamon
  • 3 overripe bananas (mashed)
  • 2 cups rolled oats
  • 1 cup dark chocolate choc chips

Instructions

  1. Preheat oven to 160°C (fan-forced).
  2. Line two baking trays with baking paper or a silicone mat.
  3. Using an electric mixer, add the butter and brown sugar.
  4. Mix for 5 minutes until pale and fluffy.
  5. Add the eggs and vanilla extract. Mix to combine.
  6. Sift the plain flour, bicarb soda and cinnamon into a bowl.
  7. Add the bananas, oats and chocolate chips. Mix to combine.
  8. Roll tablespoons of mixture into balls. Flatten slightly.
  9. Place on a baking tray, leaving 5cm between each biscuit.
  10. Bake the biscuits for 10-12 minutes, or until golden.
  11. Rest on the trays for 5 minutes before transferring to a wire rack to cool completely.
