Banana Choc Chip Cookies
Ingredients
- 180g butter (softened)
- 1 cup brown sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1½ cups plain flour
- ½ teaspoon bicarb soda
- 1 teaspoon cinnamon
- 3 overripe bananas (mashed)
- 2 cups rolled oats
- 1 cup dark chocolate choc chips
Instructions
- Preheat oven to 160°C (fan-forced).
- Line two baking trays with baking paper or a silicone mat.
- Using an electric mixer, add the butter and brown sugar.
- Mix for 5 minutes until pale and fluffy.
- Add the eggs and vanilla extract. Mix to combine.
- Sift the plain flour, bicarb soda and cinnamon into a bowl.
- Add the bananas, oats and chocolate chips. Mix to combine.
- Roll tablespoons of mixture into balls. Flatten slightly.
- Place on a baking tray, leaving 5cm between each biscuit.
- Bake the biscuits for 10-12 minutes, or until golden.
- Rest on the trays for 5 minutes before transferring to a wire rack to cool completely.
