Banana & Maple Syrup Loaf - Healthier Version

Ingredients

  • 125g butter (softened)
  • ¼ cup caster sugar
  • 5 tablespoons maple syrup
  • 2 eggs
  • 4 overripe bananas (mashed)
  • ¾ cup plain wholemeal flour
  • ¾ cup self-raising wholemeal flour
  • ½ teaspoon bicarb soda

Instructions

  1. Preheat oven to 160°C (fan forced).
  2. Grease or line a loaf tin with baking paper.
  3. Using an electric mixer, add the butter, caster sugar and maple syrup into a bowl. Beat until light and fluffy.
  4. Add the eggs and bananas.  Mix to combine.
  5. Gently fold through the plain flour, the self-raising flour and the bicarb soda.
  6. Pour the mixture into the prepared loaf tin.
  7. Bake the loaf in the oven for 35-40 minutes or until golden and cooked through.
  8. Rest in the loaf tin 5 minutes, before transferring to a wire rack to cool completely.
  9. Once cooled, this can be cut into slices and frozen
