Banana & Maple Syrup Loaf - Healthier Version

Ingredients
- 125g butter (softened)
- ¼ cup caster sugar
- 5 tablespoons maple syrup
- 2 eggs
- 4 overripe bananas (mashed)
- ¾ cup plain wholemeal flour
- ¾ cup self-raising wholemeal flour
- ½ teaspoon bicarb soda
Instructions
- Preheat oven to 160°C (fan forced).
- Grease or line a loaf tin with baking paper.
- Using an electric mixer, add the butter, caster sugar and maple syrup into a bowl. Beat until light and fluffy.
- Add the eggs and bananas. Mix to combine.
- Gently fold through the plain flour, the self-raising flour and the bicarb soda.
- Pour the mixture into the prepared loaf tin.
- Bake the loaf in the oven for 35-40 minutes or until golden and cooked through.
- Rest in the loaf tin 5 minutes, before transferring to a wire rack to cool completely.
- Once cooled, this can be cut into slices and frozen
