Chewy Anzac Biscuits
Ingredients
- 1 cup rolled oats
- ⅔ cup brown sugar
- 1 cup plain flour
- ¾ cup desiccated coconut
- 140g butter
- 3 tablespoons golden syrup
- ½ teaspoon bicarb soda
- 3 tablespoons water
Instructions
- Preheat oven to 160°C (140°C for fan-forced).
- Line baking trays with baking paper.
- Put the rolled oats, brown sugar, plain flour and coconut into a large mixing bowl and mix together well.
- Heat the butter, golden syrup and water together in a saucepan on medium heat.
- Stir the mixture for two minutes, until the butter has melted.
- Add the bicarb soda and then remove from the heat.
- Add the contents of the saucepan to the bowl of oats mixture, then mix together well until all dry ingredients are wet.
- Roll the mixture into ball sizes of your choice and place them onto the baking trays. Allow room for them to spread.
- Gently flatten each biscuit with your hand or by lightly pressing a fork on each one.
- Bake in the oven for approximately 12 minutes, or until the biscuits have turned a light, golden colour.
- Remove from the oven and allow to cool.
Notes
This recipe will make approximately 20 Anzac biscuits.
