Sticky Date Slice
Ingredients
- 2 cups pitted dates (chopped)
- 1 cup water
- ½ cup brown sugar
- 90g butter (chopped)
- ¼ cup maple syrup
- 1 teaspoon bicarbonate of soda
- 3 eggs (lightly beaten)
- 1¾ cups self-raising flour
- 2 teaspoons ground cinnamon
- 1 teaspoon ground ginger
Instructions
- Preheat oven to a moderate, 180°C.
- Lightly grease and line a 19 x 30cm lamington pan, extending paper 2cm above the edge on the two long sides.
- In a large saucepan, combine the chopped dates and water, then bring to the boil on high.
- Remove from the heat and stir through the brown sugar, butter, maple syrup and bicarb soda.
- Transfer the mixture to a medium bowl and set aside for 10 minutes to cool. Stir in the eggs.
- Sift the flour and spices together into a large bowl.
- Fold the date mixture through. Spoon into the prepared pan, smoothing the top.
- Bake for 25-30 minutes, until cooked when tested with a skewer.
- Cool in the pan for 5 minutes before turning out onto a wire rack to cool completely.
