Sticky Date Slice

Ingredients

  • 2 cups pitted dates (chopped)
  • 1 cup water
  • ½ cup brown sugar
  • 90g butter (chopped)
  • ¼ cup maple syrup
  • 1 teaspoon bicarbonate of soda
  • 3 eggs (lightly beaten)
  • 1¾ cups self-raising flour
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger

Instructions

  1. Preheat oven to a moderate, 180°C. 
  2. Lightly grease and line a 19 x 30cm lamington pan, extending paper 2cm above the edge on the two long sides.
  3. In a large saucepan, combine the chopped dates and water, then bring to the boil on high. 
  4. Remove from the heat and stir through the brown sugar, butter, maple syrup and bicarb soda. 
  5. Transfer the mixture to a medium bowl and set aside for 10 minutes to cool. Stir in the eggs.
  6. Sift the flour and spices together into a large bowl. 
  7. Fold the date mixture through. Spoon into the prepared pan, smoothing the top.
  8. Bake for 25-30 minutes, until cooked when tested with a skewer. 
  9. Cool in the pan for 5 minutes before turning out onto a wire rack to cool completely.
