Sweet Rice Pudding

Ingredients
- 1 litre (4 cups) milk
- 1/3 cup (75g) caster sugar
- 5cm piece of orange rind
- ½ cup (100g) short grain rice
- 1 tablespoon custard powder
- ¼ cup (60ml) milk, extra
- Ground cinnamon
Instructions
- Combine milk, sugar and orange rind in a pan.
- Stir constantly over heat (without boiling) until the caster sugar is dissolved.
- Bring to the boil.
- Add the rice and simmer uncovered for approximately 30 minutes (or until the rice is tender), stirring occasionally.
- Remove the orange rind.
- Stir in blended custard powder and extra milk.
- Stir over heat until mixture boils and thickens.
- Pour mixture into four serving dishes and sprinkle with ground cinnamon.
Notes
NB: This recipe serves 4 people. This can be served warm or cold, and can also be made a day ahead. This is not suitablefor the freezer, but is suitable for the microwave.
