Sweet Rice Pudding

Ingredients

  • 1 litre (4 cups) milk
  • 1/3 cup (75g) caster sugar
  • 5cm piece of orange rind
  • ½ cup (100g) short grain rice
  • 1 tablespoon custard powder
  • ¼ cup (60ml) milk, extra
  • Ground cinnamon

Instructions

  1. Combine milk, sugar and orange rind in a pan.
  2. Stir constantly over heat (without boiling) until the caster sugar is dissolved.
  3. Bring to the boil. 
  4. Add the rice and simmer uncovered for approximately 30 minutes (or until the rice is tender), stirring occasionally.
  5. Remove the orange rind.
  6. Stir in blended custard powder and extra milk.
  7. Stir over heat until mixture boils and thickens.
  8. Pour mixture into four serving dishes and sprinkle with ground cinnamon.

Notes

NB: This recipe serves 4 people.  This can be served warm or cold, and can also be made a day ahead. This is not suitablefor the freezer, but is suitable for the microwave.
