Hollandaise Sauce

Ingredients

  • 4 egg yolks
  • ½ lemon (juiced, add more to taste)
  • 2 pinches salt
  • 2 pinches cayenne pepper
  • ½ cup salted butter (melted)

Instructions

  1. Beat the egg yolks, lemon juice, salt and cayenne pepper together in a microwave-safe bowl until smooth.
  2. Slowly stream the melted butter into the egg yolk mixture while whisking to incorporate
  3. Heat in the microwave for 15-20 seconds and whisk again.
  4. If the sauce separates after microwaving, add a splash of water until combined.
