Hollandaise Sauce
Ingredients
- 4 egg yolks
- ½ lemon (juiced, add more to taste)
- 2 pinches salt
- 2 pinches cayenne pepper
- ½ cup salted butter (melted)
Instructions
- Beat the egg yolks, lemon juice, salt and cayenne pepper together in a microwave-safe bowl until smooth.
- Slowly stream the melted butter into the egg yolk mixture while whisking to incorporate
- Heat in the microwave for 15-20 seconds and whisk again.
- If the sauce separates after microwaving, add a splash of water until combined.
