Kamado Joe Bacon Wrapped Onion Rings

The worlds* best appetizer…

I had seen a photo of these marvellous creations on Instagram a month or so ago. My immediate reaction was OMG. At the time I think I commented something to the effect of “You sir have won!” I filed it in the memory bank for something as a must do on the Kamado Joe at some point. Well, this weekend was the perfect opportunity to have a try at my version of Bacon Wrapped Onion Rings.

Here is how I did it.

Kamado Setup:

For the bacon wrapped onion rings, I was looking to set the Kamado Joe for indirect cooking with a target temp ~300f. Add some smoke wood for that extra smoky goodness.

Here are some of the essential items that will make cooking the bacon wrapped onion rings much easier.

Method:

Cut the onion into thick rings around 10 or 15mm. Thick enough to be sturdy, I found that I was able to get about 3-4 vertical cuts in each onion, depending on size, and this gave a decent amount of rings.

Separate the individual rings

Coat the individual rings with your favourite BBQ sauce, or chilli sauce if you like things spicy

Now the fun part, wrap your onion rings with bacon and pin through with a toothpick. Repeat for all remaining onion rings. (Using long toothpicks/skewers rather than standard toothpicks, makes picking them up to place on the grill much easier, protecting the bacon before cooking. It also gives you a readymade “handle” to eat them with.)

Sprinkle with your favourite BBQ rub.

Now the Kamado is up to temperature at around 150 c (300f ) it is time to place the bacon wrapped onion rings directly on the grill. A cast iron or stainless grate is perfect.

Now all that is left to do is let the Kamado work its magic. The cooking time will vary cook to cook but allow yourself between 60 and 90 minutes. This also somewhat depends on how you like your bacon, in my case I like it extra crispy so I was at the longer end of the cooking time.

Results are outstanding.

At first, I thought they were a lot of trouble to create. Wrapping bacon around onion rings is not an easy task, at least for me and my large hands. But after tasting them, wholly molly – need to do these EVERY time I fire up the Kamado Joe. They are SO worth the effort.

These could be cooked a little in advance and kept warm whilst getting the main meal cooked , or just served as an awesome snack during the football or just because !

What I would do differently

With every cook, there is always room for reflection and to see if there are any points along the way that could be improved. It could be to improve the technique or the flavour profile. It’s not a good day if you haven’t learnt something.

Here are some of the things I would do differently:

  • use a grill rack extender for more space. More space = more Bacon Wrapped Onion Rings J
  • choose or trim the bacon to be more along the lines of “streaky” or Canadian bacon. This style is more uniform and would make the wrapping process easier.
  • make more! They just don’t last long enough.
