So the update is that I have managed to knock two items of the thermometer wish list. I have purchased the GDealer instant-read thermometer. This is ideal for spot checks of your meat and for the price performs really well. You can check out the review here.
The second item I have recently purchased is the Maverick ET-733 Wireless Meat thermometer. Again this one is really handy. Dual probes allow me to monitor the grill and the meat temperature at the same time. As the probes are multi-use you can also use both probes as meat thermometers if you are cooking multiple types of meat. The review of this one can be found here.
I think this one will be on the list as the next purchase as I really could have used the additional cooking space for both the smoked tomato and smoked capsicums.
