Kamado Joe Lamb Chops.

Was thinking of just frying on the stove, but common sense kicked in. Fired up the Kamado Joe and decided to give the lamb chops some hot and fast action. Best damn chops! Every time I cook on the Kamado Joe, I am just gobsmacked how much flavour is imparted on to the food. I don’t think there is anything like it.

Preperation

Very minimal prep – Salt, Pepper, Garlic.

Kamado grill in the lower position. Let the temps come up to a near searing range (~ 250/300°c) while prepping meat and veggies.

My suggestion is that no matter what you are thinking, put in that 15 minutes extra and fire up the grill, you won’t be disappointed.

For the spur of the moment cooks it is really important that you are comfortable with lighting your Kamado quickly and are confident with your fire and temperature management. Fortunately a lot of time these cooks are in the hot and fast category and are a little more forgiving. I start my Kamado with an old paint stripper heat gun – it gets the job done, but there are certainly more elegant solutions available. Here is a couple of examples. I haven’t tried these out yet, but I am sure I will once the old heat gun packs it in.
