Kamado Joe, Stuffed Capsicum, Stuffed Peppers

Last minute decision for a late lunch.

We had decided that we would cook a roast on the Kamado Joe for dinner but was feeling hungry and looking for something a little different. Decided to give some smoked, stuffed capsicum (peppers) a try.

Inspiration

Inspired by a John Setzler YouTube video, I decided to give it a go.

A really simple recipe.

  • minced beef
  • chopped onion
  • minced garlic
  • herbs and spices to taste
  • 1/2 can of chopped tomatoes
  • your favourite rub for added flavour

Cook for about 1hr 10min with the addition of some parmesan cheese in the last 10-15 minutes to melt and brown it off.

Indirect method at around 175c

Result

They turned out SUPER tasty and definitely on the do again list. The meat did “shrink” a little, not sure why? Perhaps as the juice leaked out of the bottom of the capsicum it had a drying effect causing the shrinkage?
