How do you use your left overs ?
That age old question how to best utilise the delicious leftovers from a roast, especially when it was SO delicious.
Decided to char up some corn on the cob, strip the kernels off and mix with the diced remains of the pork scotch fillet, put in a wrap and topped off with some fresh diced tomato and a drizzle of some BBQ sauce – delicious.

My method for char grilling the Corn :
Utilise the remaining charcoal from the roast cook , still heaps.
Grill grates on the top level. Prepped the corn with a liberal amount of fresh ground himalayan salt A couple of dobs of “Buttery” Nuttelex
Placed corn on the rack directly above the hottest section of the grill and closed the lid for 10 minutes. Kamado was wide open at this stage , aiming for around 350F and playing from there.
Every couple of minutes just give the corn a turn or shuffle around the grill. Looking to get a good colour change, without too much burn. Once nearly complete I added a touch more butter and salt. Delicious
