Macaroni and Cheese is a Classic Side Dish

Macaroni and cheese is a classic side dish that can be easily cooked on a Kamado Joe grill. Here’s a recipe for making macaroni and cheese on a Kamado Joe.

Ingredients:

  • 1 pound of elbow macaroni
  • 4 cups of milk
  • 4 cups of heavy cream
  • 1 cup of butter
  • 1 cup of all-purpose flour
  • 2 cups of grated cheddar cheese
  • 1 cup of grated Parmesan cheese
  • Salt and pepper, to taste

Instructions:

  1. Preheat your Kamado Joe grill to 350 degrees Fahrenheit and set it up for indirect heat cooking.
  2. Cook the elbow macaroni according to the package instructions and set it aside.
  3. In a separate pot, melt the butter over medium heat. Whisk in the flour and cook for 2-3 minutes.
  4. Slowly add the milk and cream, whisking constantly to prevent lumps from forming. Bring the mixture to a simmer and cook for 5-7 minutes, or until it thickens.
  5. Remove the pot from the heat and stir in the cheddar cheese and Parmesan cheese until they are fully melted and incorporated into the sauce.
  6. Add the cooked macaroni to the cheese sauce and stir until the pasta is fully coated.
  7. Transfer the macaroni and cheese to a cast iron skillet or dutch oven that can withstand the heat of the grill.
  8. Place the skillet on the grill and cook for 15-20 minutes or until the top is golden brown and bubbly.
  9. Remove the skillet from the grill and let it cool for a few minutes before serving.

Note: You could also add some toppings like bread crumbs, bacon bits, or green onions for a little added texture and flavor.
