Kamado Smoked Beef Short Ribs

Is there a better way to spend a Saturday, then smelling Cherry wood smoke rolling of simple beef short ribs? Smoked beef short ribs are so easy and so tasty.

Nothing fancy today, following this weeks theme of keeping it simple. I haven’t written a blog on each of my cooks this week as it has been a very busy couple of weeks with a couple of sick kids.

I have fired the grill up most nights this week for simple quick meals – Lamb Chops and Scotch Fillet steaks. There may have also been some sausages as well.

I love the Kamado Joe !!

Similar to my previous Beef Short Rib cook was just looking for simple and flavoursome. I picked up a couple of packets of ribs from the local Coles supermarket, this time I know they would come as singles.

After a quick trim, it was time to add some flavour. One pack got a liberal coating of plain salt and pepper, I was aiming to see what the cherry wood could add. The second pack got a liberal coating of my favourite beef rub – Lanes BBQ Ancho Expresso.

While prepping the ribs I had the Kamado warming up, set for indirect, with the deflectors in the low position, the addition of a water pan (mainly to keep deflectors clean) and grill racks in the upper position. Aiming for temps around 130~150deg C mark.

Once the Kamado has settled and the ribs are prepped, its nothing but an introduction – Beef meet Fire…

These smoked beef short ribs were delicious, they probed like butter and were still juicy.
