Macaroni and Cheese is a Classic Side Dish
Macaroni and cheese is a classic side dish that can be easily cooked on a Kamado Joe grill. Here’s a recipe for making macaroni and cheese on a Kamado Joe.
Ingredients:
- 1 pound of elbow macaroni
- 4 cups of milk
- 4 cups of heavy cream
- 1 cup of butter
- 1 cup of all-purpose flour
- 2 cups of grated cheddar cheese
- 1 cup of grated Parmesan cheese
- Salt and pepper, to taste
Instructions:
- Preheat your Kamado Joe grill to 350 degrees Fahrenheit and set it up for indirect heat cooking.
- Cook the elbow macaroni according to the package instructions and set it aside.
- In a separate pot, melt the butter over medium heat. Whisk in the flour and cook for 2-3 minutes.
- Slowly add the milk and cream, whisking constantly to prevent lumps from forming. Bring the mixture to a simmer and cook for 5-7 minutes, or until it thickens.
- Remove the pot from the heat and stir in the cheddar cheese and Parmesan cheese until they are fully melted and incorporated into the sauce.
- Add the cooked macaroni to the cheese sauce and stir until the pasta is fully coated.
- Transfer the macaroni and cheese to a cast iron skillet or dutch oven that can withstand the heat of the grill.
- Place the skillet on the grill and cook for 15-20 minutes or until the top is golden brown and bubbly.
- Remove the skillet from the grill and let it cool for a few minutes before serving.
Note: You could also add some toppings like bread crumbs, bacon bits, or green onions for a little added texture and flavor.
